I haven’t been spending too much time in the kitchen this past week….because I’ve been gearing up for a trip overseas!   Connor and I board a plane to Italy tonight and will be gone for the next eight days.

We actually booked this trip about seven months ago, when we were trying to take advantage of Connor’s spring break from med school.  Initially we planned on going somewhere warm and close, but found a pretty amazing Groupon Deal (our first) that we couldn’t pass up.  We will be staying in a few towns on the Amalfi Coast, as well spending two nights in Naples before heading back home next Sunday.

Ever since I’ve seen pictures of the Amalfi Coast, it has been on my bucket list.  We are really excited!

Things will be a little quiet over here for the next week or so, but I’ll be sure to share lots of details upon our return–my camera is charged up and ready to take thousands of photos, don’t worry.  Can’t wait to share details of the trip with all of you!

P.S.  Words cannot describe how excited I am about the sheer quantity of pizza and pasta that will be consumed over the next week.

P.P.S. Our trip includes a car rental–here’s hoping this is not us in a few days! Yikes.
