Prepare Compote: In a large skillet, heat the butter until it is just beginning to bubble lightly. Add the chopped apples and cook for 2 to 3 minutes, stirring occasionally. Add the maple syrup, orange zest, cinnamon, and salt to the pan, and continue to cook for an additional 3 to 4 minutes, stirring often, until the apples begin to turn translucent.
Add the cranberries to the pan and continue to cook, stirring frequently, for another 4 to 5 minutes until they begin to burst. If necessary, deglaze the pan with 1 to 2 tablespoons of water. Remove from the heat and allow to cool completely before assembling the parfaits.
Prepare Yogurt: In a separate bowl, whisk together the honey and yogurt. Season to taste, adding additional honey if desired.
Assemble Parfaits: Using a pastry bag (fitted with a small round tip) or spoon, add a layer of yogurt to each glass or container of your choice. Top with a thin sprinkling of granola. Add a thin layer of compote. Repeat. Finish each compote with a small dollop of honey yogurt and a sprinkle of granola. Serve.
