Homemade mango daiquiris with a sorbet twist! The sorbet in these daiquiri floats has the added bonus of keeping your cocktail chilled. It slowly melts into the cocktail, adding sweetness and a fresh mango flavor that complements the lime so well.
Ingredients
Per Cocktail:
ice
1½ounces (45 mL)freshly squeezed lime juice
1ounce (30 mL)simple syrupsee recipe in notes below
1½ounces (45 mL)white rum
granulated sugarfor rimming the glasses
frozen mango sorbet
fresh lime slicesfor garnishing
Instructions
Combine a scoop of ice, the lime juice, simple syrup, and white rum in a cocktail shaker. Cover and shake extremely well. Set aside.
Rub a wedge of lime along the rim of your cocktail glass (small margarita or martini glasses work well), and dip the glasses in granulated sugar. Place a small melon-ball size scoop of mango sorbet into the bottom of the glass, and top with the daiquiri mixture. Serve immediately.
Tips for Success:
To make simple syrup (yield = ½ cup): Combine ½ cup (100 g) granulated sugar and ½ cup (120 mL) water in a small saucepan. Bring to a boil, whisking until the sugar dissolves completely. Remove from heat and allow to cool completely before refrigerating.
